Wasabi Fields わさび田

The famous Japanese radish, wasabi, Eutrema japonicum or Wasabia japonica, is part of the family of plants that also includes mustard and horseradish. Wasabi thrives in cold, clear water and is grown in terraced stone pools in the mountains of Japan. When the wasabi is ready to be harvested, the pools are drained and the plants are dug up. The tops are cut off and the roots are ground into a paste that is used to compliment the flavor of raw fish and other Japanese cuisine.

Old Amagi Tunnel
